Ingredients
- Brussels sprouts
- Extra virgin olive oil

- Thick-cut bacon
- Yellow onions
- Shallots
- Garlic
- Light brown sugar
- Maple syrup
- Apple cider vinegar
- Chili powder (optional)
Instructions
- Preheat oven to 450°F and line a baking sheet with parchment paper.
- Clean, trim, and halve Brussels sprouts, placing them cut side down on the baking sheet.
- Whisk together olive oil, salt, and pepper; drizzle over Brussels sprouts and roast for 20-25 minutes.
- Cook thick-cut bacon in a skillet over medium heat until crispy; set aside to drain on paper towels.
- In the same skillet with some bacon grease, sauté onions and shallots until caramelized.
- Stir in garlic, brown sugar, maple syrup, apple cider vinegar, and crispy bacon. Simmer for 5 minutes.
- Add roasted Brussels sprouts to skillet and toss to coat in bacon jam; cook for an additional 2 minutes.
