Ingredients

  • Brussels sprouts
  • Extra virgin olive oil
  • Kosher salt
  • Black pepper
  • Thick-cut bacon
  • Yellow onions
  • Shallots
  • Garlic
  • Light brown sugar
  • Maple syrup
  • Apple cider vinegar
  • Chili powder (optional)

Instructions

  • Preheat oven to 450°F and line a baking sheet with parchment paper.
  • Clean, trim, and halve Brussels sprouts, placing them cut side down on the baking sheet.
  • Whisk together olive oil, salt, and pepper; drizzle over Brussels sprouts and roast for 20-25 minutes.
  • Cook thick-cut bacon in a skillet over medium heat until crispy; set aside to drain on paper towels.
  • In the same skillet with some bacon grease, sauté onions and shallots until caramelized.
  • Stir in garlic, brown sugar, maple syrup, apple cider vinegar, and crispy bacon. Simmer for 5 minutes.
  • Add roasted Brussels sprouts to skillet and toss to coat in bacon jam; cook for an additional 2 minutes.
