Instructions
- If chicken breasts are not pre-brined, combine 2 cups of lukewarm water with 1/4 cup kosher salt in a large bowl; stir until salt is absorbed. Add 2 cups of cold water or ice cubes to cool the mixture. Brine the chicken breasts for 15 minutes or refrigerate for up to 6 hours. Rinse and dry the chicken afterward.
- Preheat the oven to 450°F (232°C).
- Arrange chicken breasts in a baking dish. Brush both sides with melted butter or olive oil. In a separate bowl, mix salt, pepper, garlic powder, and paprika, then sprinkle over the chicken on both sides.
- Bake for 15-18 minutes, or until the internal temperature reaches 165°F (74°C). Optionally, broil for 3-5 minutes at high heat for a golden finish. Monitor closely to prevent overcooking.
- Once cooked, transfer chicken to a plate, tent with aluminum foil, and let it rest for 5-10 minutes before serving.
