  • 8 chicken thighs (bone-in, skin-on)
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 ½ teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  • Preheat the oven to 425°F (220°C) and let the chicken thighs come to room temperature. Pat them dry with a paper towel.
  • In a small bowl, mix garlic powder, onion powder, paprika, oregano, thyme, salt, and pepper to create a spice blend.
  • In a large mixing bowl, combine chicken thighs and olive oil, then add two-thirds of the spice blend and coat the chicken well, including under the skin.
  • Place the seasoned chicken on a rack over a baking sheet. Sprinkle the remaining spice blend over the top.
  • Bake for 35 to 40 minutes or until the internal temperature reaches 170°F. For extra crispiness, broil for 2 to 3 minutes. Allow resting for 5 minutes before serving.
