Description

Baked Parmesan Hash Brown Cups are a delightful blend of crispy hash browns and melted cheese, ideal for a quick meal or a satisfying snack. Simple to prepare and loaded with flavor, these cups bring comfort food to your table while being easy to make at home.


Ingredients

  • 2 cups frozen hash browns (thawed)
  • 1 cup freshly grated parmesan cheese (divided)
  • 2 large eggs
  • 2 green onions (chopped)
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  • Preheat your oven to 400°F (200°C) and grease a muffin tin with nonstick spray.
  • In a mixing bowl, combine the thawed hash browns, half of the grated Parmesan cheese, eggs, salt, and pepper.
  • Divide the mixture into the muffin tin by scooping approximately 2 tablespoons into each slot, pressing firmly to create cups.
  • Bake in the preheated oven for about 20-25 minutes or until they turn golden brown and crispy.
  • Once baked, remove from the oven, sprinkle the remaining Parmesan cheese on top, and return to the oven for an additional 5 minutes until bubbly.
  • Garnish with chopped green onions and serve warm.

Notes

Let the cups cool for a few minutes before removing them from the muffin tin for easier handling.
Feel free to add cooked bacon or other veggies for additional flavor and texture.
Store any leftovers in an airtight container in the refrigerator for up to three days.
