- 3 large eggs
- â…“ cup pure maple syrup
- 1 teaspoon vanilla extract
- ½ cup oat flour
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- 1 cup blueberries (plus more for topping)
Instructions
- Preheat the oven to 350°F and prepare an 8×8-inch baking dish with cooking spray or parchment paper.
- Blend cottage cheese, eggs, maple syrup, vanilla extract, oat flour, baking powder, cinnamon, and salt until smooth.
- Gently stir in the blueberries, reserving some for topping if desired.
- Pour the batter into the prepared baking dish and top with extra blueberries.
- Bake for 35-40 minutes until golden and a toothpick inserted comes out mostly clean.
- Let cool slightly, slice, and serve warm or at room temperature.
Notes
Store at room temperature for a day or in the refrigerator for up to 4-5 days in an airtight container.
Wrap slices tightly in plastic wrap to freeze for up to 3 months; reheat at 350°F for 10-15 minutes before serving.
For a lighter version, substitute full-fat cottage cheese with low-fat cottage cheese.
