Description

This Blueberry Cottage Cheese Breakfast Bake combines creamy cottage cheese with juicy blueberries for a delicious and nutritious start to your day. Easy to prepare and perfect for a cozy breakfast or brunch!


Ingredients

  • 1 ½ cups full-fat cottage cheese
  • 3 large eggs
  • â…“ cup pure maple syrup
  • 1 teaspoon vanilla extract
  • ½ cup oat flour
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 cup blueberries (plus more for topping)

Instructions

  • Preheat the oven to 350°F and prepare an 8×8-inch baking dish with cooking spray or parchment paper.
  • Blend cottage cheese, eggs, maple syrup, vanilla extract, oat flour, baking powder, cinnamon, and salt until smooth.
  • Gently stir in the blueberries, reserving some for topping if desired.
  • Pour the batter into the prepared baking dish and top with extra blueberries.
  • Bake for 35-40 minutes until golden and a toothpick inserted comes out mostly clean.
  • Let cool slightly, slice, and serve warm or at room temperature.

Notes

Store at room temperature for a day or in the refrigerator for up to 4-5 days in an airtight container.
Wrap slices tightly in plastic wrap to freeze for up to 3 months; reheat at 350°F for 10-15 minutes before serving.
For a lighter version, substitute full-fat cottage cheese with low-fat cottage cheese.
