- 1 egg yolk room temperature

- In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar for two minutes.
- Add the vanilla extract, egg, and egg yolk, whisking until the mixture is light and creamy.
- Combine the flour, baking soda, corn starch, and salt, mixing just until everything is incorporated.
- Fold in the chocolate chips until evenly distributed.
- Scoop about 1/4 cup of cookie dough for each cookie, rolling them into smooth balls. Place on a parchment-lined baking sheet to chill for 1 hour in the refrigerator or 30 minutes in the freezer.
- Preheat your oven to 325°F (160°C).
- Arrange cookie dough balls on a baking sheet lined with parchment or a silicone mat, leaving about 3 inches between each.
- Bake for 12 to 15 minutes until the edges are golden, and the center appears slightly underbaked.
- Cool the cookies on the baking sheet for at least 5 minutes, then transfer to a wire rack to finish cooling.
- Store in an airtight container for up to 5 days.
Notes
For chewier cookies, avoid overbaking them—remove them while they still look slightly underbaked.
