This Classic Spaghetti Bolognese is a family favorite known for its rich flavor and straightforward preparation. Made with minced beef, tomatoes, and herbs, it’s a comforting dish that’s perfect for a quick dinner any night of the week.

- 1 tbsp olive oil
- 1 onion peeled and finely diced
- 2 cloves garlic peeled and minced
- 1 carrot peeled and finely diced
- 3 chestnut mushrooms finely diced
- 450 g (1 lb) minced beef
- 120 ml (1/2 cup) red wine
- 3 tbsp tomato puree
- 1 tsp dried oregano
- ½ tsp dried thyme
- 1 tbsp worcestershire sauce
- 1 beef stock cube crumbled
- 2 x 400 g (2 x 14 oz) tins finely chopped tomatoes
- ½ tbsp light brown sugar
- ½ tsp salt
- ½ tsp black pepper
- 300 g (10.5 oz) dried spaghetti or fresh pasta
- small bunch spring onions (scallions) chopped
- grated parmesan
Instructions
- Heat the olive oil in a frying pan over medium-high heat and add the diced onion. Cook for 5 minutes, stirring frequently until softened.
- Add minced garlic and sauté for an additional minute.
- Incorporate the diced carrot and mushrooms, cooking for 2-3 minutes until slightly softened.
- Add the minced beef to the pan and cook for 5-6 minutes, stirring often and breaking up any large pieces until browned.
- Pour in the red wine, bringing it to a boil. Allow it to bubble for 2-3 minutes until reduced by three-quarters.
- Mix in the tomato puree, oregano, thyme, Worcestershire sauce, crumbled beef stock cube, tinned tomatoes, brown sugar, salt, and black pepper. Stir well and bring the mixture to a boil. Reduce heat and simmer for 15-20 minutes until thickened.
- Meanwhile, bring a large pan of salted water to a boil. Add the spaghetti and cook for 10-12 minutes until al dente.
- Drain the spaghetti and distribute it into four bowls.
- Top each portion of spaghetti with the bolognese mixture, and sprinkle with chopped spring onions and grated parmesan before serving.
Notes
For a richer flavor, use a high-quality red wine.
Feel free to substitute minced beef with turkey or chicken for a lighter version.
This sauce works well with various pasta types; try it with penne or fusilli for a twist.
