- 6 ounces bacon, cut into 1 inch pieces
- 1 pound pork sausage
- 2 large potatoes, peeled and cut into bite sized pieces
- 2 large onions, sliced
- 3 cups beef broth (or chicken broth)
- salt and pepper to taste
- 2 tablespoons parsley, chopped
Instructions
- Cook the bacon in a large saucepan and set aside, keeping 2 tablespoons of the bacon grease in the pan.
- Add the sausage and brown it on all sides before removing it from the pan.
- Cook the onions in the saucepan until they become tender.
- Layer the potatoes on top of the onions, followed by the bacon and sausage. Pour in the broth, bring to a boil, then reduce the heat.
- Cover the saucepan and let it simmer for 2 hours.
- Season with salt and pepper to taste, mix in the chopped parsley, and enjoy!
Notes
For a richer flavor, use a combination of beef and chicken broth.
Feel free to add other vegetables like carrots or celery for added nutrition.
