Description

This Cottage Cheese Alfredo is a delightful twist on a classic, featuring creamy cottage cheese and nutty Parmesan sauce that coats linguine for a quick, satisfying meal. Perfect for busy evenings or a cozy gathering, it’s healthy comfort food that’s simply irresistible.

Ingredients

  • Cottage Cheese (2 cups)
  • Grated Parmesan Cheese (1/2 cup)
  • Half and Half (1/4 cup)
  • Garlic Powder (1 teaspoon)
  • Onion Powder (1 teaspoon)
  • Salt (1/2 teaspoon)
  • Black Pepper (1/2 teaspoon)
  • Linguine (1 pound)
  • Fresh Parsley (2 tablespoons, chopped)
  • Extra Grated Parmesan

Instructions

  • Boil the pasta in salted water until al dente.
  • Blend cottage cheese, Parmesan, half and half, garlic powder, onion powder, salt, and black pepper until smooth.
  • Warm the blended sauce in a skillet over medium heat, adjusting consistency with pasta water if needed.
  • Combine cooked linguine with the sauce, tossing until coated evenly.
  • Serve immediately, garnished with parsley and extra Parmesan.

Notes

Use freshly grated Parmesan for the best flavor.
If you prefer, substitute cottage cheese with ricotta for a different texture.
Leftovers can be stored in the fridge for up to four days.
