These Cottage Cheese Brownies are a delicious treat, combining rich chocolate flavor with protein-packed cottage cheese. Perfect for a wholesome dessert or a snack that satisfies your sweet tooth while keeping it healthy.

- 2/3 cup cottage cheese blended
- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 cup coconut sugar
- 1/4 cup maple syrup
- 1/2 cup almond flour
- 1/3 cup cacao powder
- 1/4 tsp baking soda
- 1/3 cup chocolate chips (semi-sweet, dark chocolate or milk chocolate)
Instructions
- Preheat your oven to 350°F and line an 8×8-inch baking dish with parchment paper or grease it well.
- Add cottage cheese to a blender or food processor and blend until smooth, resembling thick yogurt. Set aside.
- In a large bowl, whisk together eggs, vanilla extract, coconut sugar, and maple syrup. Stir in the blended cottage cheese until well combined.
- Add almond flour, cacao powder, and baking soda, mixing until you achieve a smooth brownie batter.
- Fold in chocolate chips, reserving some for topping if desired.
- Pour the batter into the prepared baking dish, spreading it evenly, and sprinkle with remaining chocolate chips.
- Bake for 24–26 minutes, or until a toothpick inserted comes out mostly clean with a few moist crumbs.
- Allow the brownies to cool in the pan for 15–20 minutes before slicing, as they will continue to set.
Notes
You can substitute coconut sugar with brown sugar if needed.
For an extra fudgy texture, do not overbake the brownies.
