- 1/2 cup butter
- 1 tsp garlic minced
- 1 cup heavy whipping cream
- 1 cup half and half
- 1/2 teaspoon italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups freshly grated parmesan cheese
- up to 1/4 cup hot milk or pasta water
- 1 pkg fettuccine noodles – cooked to package directions
- freshly chopped parsley for garnish
Instructions
- Melt the butter in a large skillet over medium high heat and add the minced garlic. Let simmer for just a minute.
- Add in the cream and half and half and whisk until combined, then bring to a gentle simmer.
- Whisk in the Italian seasoning, salt, and pepper.
- Stir in the Parmesan cheese, allowing it to melt slowly while mixing.
- Once the cheese is fully melted and smooth, whisk in small amounts of hot milk or pasta water to achieve your desired sauce thickness.
- Toss the sauce with the cooked fettuccine noodles and garnish with parsley if desired.
Notes
For a thicker sauce, add less hot milk or pasta water.
Freshly grated parmesan works best for a smooth, creamy texture.
This sauce can easily be adjusted to your taste with added spices or herbs.
