Ingredients
- Boneless, skinless chicken breasts

- Baby potatoes

Instructions
- Preheat oven to 425°F and prepare a baking sheet with parchment paper.
- Toss halved baby potatoes with olive oil, garlic powder, rosemary or thyme, salt, and pepper.
- Spread potatoes in a single layer and roast for 25-30 minutes, turning halfway.
- Season chicken with salt, pepper, and garlic powder.
- Sear chicken in olive oil for 4-5 minutes on each side until golden.
- Sauté minced garlic in the same skillet for about a minute.
- Pour in chicken broth, scraping the pan to mix flavors, and let simmer for 2-3 minutes.
- Stir in heavy cream, Parmesan, Dijon mustard, and Italian seasoning, simmering until thickened.
- Return chicken to the skillet, spoon sauce over it, and simmer for 2-3 minutes more.
- Serve chicken with roasted potatoes and garnish with parsley.
