Ingredients

  • Boneless, skinless chicken breasts
  • Salt and black pepper
  • Garlic powder
  • Olive oil
  • Fresh garlic cloves
  • Chicken broth
  • Heavy cream
  • Grated Parmesan cheese
  • Dijon mustard
  • Italian seasoning
  • Fresh parsley (optional)
  • Baby potatoes
  • Dried rosemary or thyme

Instructions

  • Preheat oven to 425°F and prepare a baking sheet with parchment paper.
  • Toss halved baby potatoes with olive oil, garlic powder, rosemary or thyme, salt, and pepper.
  • Spread potatoes in a single layer and roast for 25-30 minutes, turning halfway.
  • Season chicken with salt, pepper, and garlic powder.
  • Sear chicken in olive oil for 4-5 minutes on each side until golden.
  • Sauté minced garlic in the same skillet for about a minute.
  • Pour in chicken broth, scraping the pan to mix flavors, and let simmer for 2-3 minutes.
  • Stir in heavy cream, Parmesan, Dijon mustard, and Italian seasoning, simmering until thickened.
  • Return chicken to the skillet, spoon sauce over it, and simmer for 2-3 minutes more.
  • Serve chicken with roasted potatoes and garnish with parsley.

Notes
