- 1 1/2 cups grated parmigiano reggiano cheese
- 1 tbsp. balsamic vinegar
- 1 tbsp. chopped parsley
Instructions
- Preheat the oven to 425°F and prepare a baking sheet with parchment paper.
- Wash the cabbage and slice it in half vertically. Cut 'steaks' from one half, about 1 inch thick, ensuring they hold together at the stem.
- In a bowl, mix olive oil, 1/3 cup of grated Parmesan, garlic, salt, pepper, and smoked paprika. Brush this mixture onto both sides of the cabbage steaks.
- On the baking sheet, place piles of the remaining Parmesan, roughly 1/3 cup for each steak, and lay the cabbage steaks on top.
- Roast for 20-25 minutes, or until the cheese turns browned and crisp.
- Before serving, drizzle the steaks with balsamic vinegar and sprinkle with chopped parsley.
