Description

Crockpot Cowboy Stew is a heartwarming dish made with beef, smoky sausage, and fresh vegetables. It offers an irresistible flavor while requiring minimal prep, making it ideal for cozy dinners or meal prep.


Ingredients

  • 1 lb stew meat
  • 1 lb kielbasa sausage (sliced)
  • 1 medium white or yellow onion (diced)
  • 2 large carrots (sliced)
  • 2 stalks celery (diced)
  • 1 large russet potato (peeled and diced)
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 (16 oz) can pinto beans (rinsed and drained)
  • 1 (15.25 oz) can corn (drained)
  • 1 (14.5 oz) can diced tomatoes (do not drain)
  • 2 tablespoons chili powder
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 2 tablespoons corn starch
  • Salt and pepper (to taste)

Instructions

  • Combine the stew meat, kielbasa, onion, carrots, celery, and potato in a crockpot.
  • Pour in the beef broth and Worcestershire sauce, then add the beans, corn, tomatoes, chili powder, garlic powder, and oregano. Stir well.
  • Cover and cook on low for 7-8 hours or high for 4-6 hours until beef is tender.
  • For a thicker stew, mix corn starch with water and add 10 minutes before serving, cooking until desired thickness is reached.
  • Season with salt and pepper before serving.

Notes

Let the stew cool before storing in an airtight container for up to 4 days in the fridge.
Refrigerate or freeze leftovers in a freezer-safe container for longer storage.
