These Easy Churro Rice Krispie Treats bring a nostalgic twist with their gooey marshmallow texture and warm cinnamon flavor, perfect for any occasion!

- 6 cups Rice Krispies cereal
- 10 oz mini marshmallows (about 4 cups), plus 1 extra cup reserved
- ½ cup (1 stick) unsalted butter
- 1 tsp vanilla extract
- 1½ tsp ground cinnamon
- â…“ cup brown sugar
- â…“ cup granulated sugar (for topping)
- 1 tsp ground cinnamon (for topping)
- Nonstick spray or butter (for greasing the pan)
Instructions
- Brown the butter until golden and nutty.
- Add marshmallows, cinnamon, brown sugar, and vanilla; stir until melted.
- Remove from heat and stir in Rice Krispies to coat.
- Fold in reserved marshmallows gently.
- Press mixture into a greased pan evenly.
- Mix granulated sugar and cinnamon; sprinkle on top of bars.
- Cool completely, then cut into squares.
Notes
Store in an airtight container for up to 3 days at room temperature. They can also be refrigerated or frozen for longer storage.
Avoid pressing the mixture too tightly into the pan for a soft texture.
Feel free to add nuts or dried fruit for personalization.
