- 1 medium onion (finely diced)
- 4 garlic cloves (finely sliced)
- 1-inch knob fresh ginger (finely chopped)
- 1 medium red bell pepper (sliced)
- 1 medium zucchini (finely diced)
- 4 tablespoons tikka masala curry paste
- 1 cup tomato sauce
- 1 cup coconut milk
- 12–14 pieces falafel
- 2 cups spinach
- 1 handful fresh cilantro (roughly chopped)
- Salt and freshly ground black pepper to taste
Instructions
- Heat coconut oil in a large pan over medium heat.
- Sauté diced onion for 5-6 minutes until soft and golden.
- Add sliced garlic and chopped ginger, cooking for 30 seconds until fragrant.
- Stir in red bell pepper and zucchini, cooking for 3-4 minutes until slightly tender.
- Mix in tikka masala curry paste and cook for 1 minute, then add tomato sauce and coconut milk. Simmer gently.
- Nestle falafel into the sauce, letting them absorb flavors for 8-10 minutes.
- Stir in spinach until wilted, then season with salt and pepper to taste.
- Garnish with fresh cilantro and serve hot.
Notes
You can substitute coconut oil with olive or vegetable oil.
For added spice, include chili powder or fresh chili when introducing spices.
