  • 2 pounds boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 4 cups low-sodium chicken broth

  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup carrots diced
  • 1 cup peas tossed in last
  • 1/4 cup fresh parsley chopped

Instructions

  • Combine all ingredients: Place the chicken, rice, onion, garlic, thyme, smoked paprika, salt, black pepper, and chicken broth in the crockpot.
  • Cook low and slow: Cover and cook on low for 4–5 hours or high for 2–3 hours until the rice is tender and the chicken shreds easily.
  • Shred the chicken: Once cooked, remove the chicken, shred it with forks, and return it to the rice mixture for flavor.
  • Add veggies: Fold in diced carrots and peas, then cover and let warm through for 10 minutes.
