- 150g whole cherries
- approx. 1 cup
- 50g (1/4 cup) granulated sugar
- 1 tsp lemon juice
- cookie
- 115g (1/2 cup) unsalted butter
- room temperature
- 60g (1/2 cup) icing/powdered sugar
- 1 egg yolk
- 1/2 tsp vanilla extract
Instructions
- Finely chop cherries and combine with sugar and lemon juice in a small saucepan.
- Heat the mixture over medium heat for 8-10 minutes until thickened, then cool.
- Preheat the oven to 175C/350F and line a baking tray with parchment paper.
- Cream the butter and icing sugar until light and fluffy.
- Add the egg yolk and vanilla extract, beating until well combined.
- Stir in the flour and cornstarch until just combined.
- Roll the mixture into 12 balls and place on the lined tray.
- Using two fingerprints joined at the bottom, create a heart shape in the center of each ball.
- Fill the heart-shaped cavity with the cooled cherry jam.
- Bake for 10-12 minutes, or until lightly golden brown.
- Transfer the cookies to a cooling rack and cool for 15 minutes or until firm.
Notes
Ensure the butter is at room temperature for easy creaming.
For best results, allow the cookies to cool fully on the rack before serving.
Adjust filling sweetness by using different jam varieties.
