  • 10 small corn tortillas
  • 2 Tbsp avocado oil
  • 2 cups shredded rotisserie chicken
  • 15 oz canned black beans (drained and rinsed)
  • 1 cup canned corn (drained)
  • 1 cup chunky salsa
  • 1 Tbsp taco seasoning
  • 1 ½ cups shredded cheese
  • ½ cup diced tomatoes
  • Optional toppings: shredded lettuce, sour cream, avocado, lime juice

Instructions

  • Preheat the oven to 450°F and prepare baking sheet with corn tortillas brushed with avocado oil.
  • Bake tortillas for 8–10 minutes until golden brown, flipping halfway through.
  • In a skillet, combine shredded chicken, black beans, corn, salsa, and taco seasoning; heat for 4-5 minutes until warmed through.
  • Assemble by spooning filling onto crispy tortillas and topping with cheese.

Notes

Store cooked tostadas at room temperature for a few hours or refrigerate for up to 3 days.
