- 1 yellow onion, chopped

- 4 beef tenderloin, filet mignon steaks (~8 ounces each)

Instructions
- Pre-heat the oven to 450 degrees.
- Melt 2 tablespoons of butter in a large skillet over medium heat.
- Add the chopped onions and sauté, stirring occasionally, until they become translucent, about 3-4 minutes.
- Transfer the cooked onions to a large mixing bowl and allow them to cool for 2-3 minutes.
- In the mixing bowl, combine the blue cheese, panko breadcrumbs, kosher salt, and black pepper.
- Using a fork, gently mash the ingredients together until mixed well.
- In the same skillet, add the remaining 2 tablespoons of unsalted butter over high heat, ensuring the skillet is large enough for the steaks.
- Season both sides of the filet mignon steaks with kosher salt and black pepper.
- Sear the steaks in the hot skillet for 3 minutes on each side until they are browned.
- Top each steak with the blue cheese mixture, then transfer them to the oven for 4 minutes for rare, or 5-6 minutes for medium or longer for well-done steak.
- Once cooked, cover the steaks with foil and let them rest for 10 minutes before serving.
Notes
For a deeper flavor, let the blue cheese mixture rest for a few minutes before topping the steaks.
Make sure to allow the steaks to rest after cooking for juicier meat.
