- 1.5 teaspoons dried thyme
- 1.5 teaspoons dried basil
- 1 teaspoon ground black pepper
- 1 teaspoon cayenne pepper
- 1 tablespoon baking powder
- 4 cups vegetable oil
Instructions
- Season the chicken pieces with salt, pepper, garlic powder, and paprika in a large bowl.
- Pour the buttermilk over the chicken, ensuring it is fully submerged. Cover and refrigerate overnight.
- In a shallow dish, whisk together the flour, baking powder, and spices.
- Heat the vegetable oil in a large pot or deep fryer to 340°F.
- Remove the chicken from the buttermilk and dredge in the flour mixture. Let it rest for a few minutes.
- Carefully fry 4-5 pieces of chicken in the hot oil for about 15 minutes until golden brown.
- Remove the chicken with a slotted spoon and cool on a wire rack.
