Description

These Ground Turkey Egg Roll Bowls are a quick and healthy meal packed with flavor, featuring ground turkey, vibrant veggies, and delicious sauces. Perfect for busy nights!


Ingredients

  • 1 tbsp olive oil
  • 3 green onions, chopped, separated whites from greens
  • 1 lb ground turkey
  • 16 oz cole slaw mix
  • 1 cup shredded carrots
  • 34 garlic cloves, minced
  • 1 inch ginger grated
  • ¼ c plus tbsp low-sodium soy sauce
  • 2 tsp sriracha
  • 12 tbsp sweet chili sauce
  • 1 tbsp toasted sesame oil
  • â…“ cup chopped cilantro
  • ½ tsp pepper
  • ½ tsp salt, more or less to taste

Instructions

  • Heat olive oil in a large sauté pan over medium-high heat.
  • Sauté the chopped white parts of the green onions for 1-2 minutes.
  • Add ground turkey and break it into smaller chunks, cooking until browned and no longer pink.
  • In the last minute, stir in minced garlic and ginger.
  • Add cole slaw, shredded carrots, and soy sauce; mix well and cook for 4-6 minutes until tender.
  • Reduce heat to low; stir in sriracha, sweet chili sauce, sesame oil, green onion greens, and cilantro.
  • Season with salt and pepper, adjusting soy sauce for moisture if needed.
  • Serve topped with cilantro and sesame seeds.

Notes

Feel free to adjust the level of sriracha based on your spice preference.
This recipe is versatile; add more vegetables like bell peppers or mushrooms if desired.
