- 1 tbsp olive oil
- 3 green onions, chopped, separated whites from greens
- 1 lb ground turkey
- 16 oz cole slaw mix
- 1 cup shredded carrots
- 3–4 garlic cloves, minced
- 1 inch ginger grated
- ¼ c plus tbsp low-sodium soy sauce
- 2 tsp sriracha
- 1–2 tbsp sweet chili sauce
- 1 tbsp toasted sesame oil
- â…“ cup chopped cilantro
- ½ tsp pepper
- ½ tsp salt, more or less to taste
Instructions
- Heat olive oil in a large sauté pan over medium-high heat.
- Sauté the chopped white parts of the green onions for 1-2 minutes.
- Add ground turkey and break it into smaller chunks, cooking until browned and no longer pink.
- In the last minute, stir in minced garlic and ginger.
- Add cole slaw, shredded carrots, and soy sauce; mix well and cook for 4-6 minutes until tender.
- Reduce heat to low; stir in sriracha, sweet chili sauce, sesame oil, green onion greens, and cilantro.
- Season with salt and pepper, adjusting soy sauce for moisture if needed.
- Serve topped with cilantro and sesame seeds.
Notes
Feel free to adjust the level of sriracha based on your spice preference.
