Description

Ingredients

  • 3 lbs frozen meatballs
  • 20 oz can pineapple chunks drained with juice reserved
  • 1 red bell pepper chopped
  • 1 ½ cups bbq sauce
  • ¼ cup brown sugar
  • 3 tablespoons soy sauce
  • 2 tablespoons white vinegar
  • 4 garlic cloves minced
  • ¼ teaspoon ginger powder
  • 2 tablespoons green onions for topping

Instructions

  • Place the frozen meatballs, pineapple chunks, and chopped red bell pepper in the slow cooker.
  • In a mixing bowl, combine BBQ sauce, brown sugar, white vinegar, soy sauce, minced garlic, and ginger powder. Whisk until smooth, then pour over the meatballs.
  • Cover the slow cooker and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until meatballs are warmed and reach 160°F internally.
  • Stir the mixture to coat the meatballs with sauce and sprinkle sliced green onions on top before serving.

Notes

For a spicier kick, consider adding a dash of hot sauce to the BBQ mixture.
You can substitute the frozen meatballs with homemade ones or another preferred brand.
