Ingredients

  • 3 Vine Ripe Tomatoes
  • 1/2 small Onion
  • 2 tbsp Fresh Basil, Chopped
  • 1 clove Garlic, Minced
  • 1/2 tsp Dried Oregano
  • 1/4 tsp Black Pepper
  • 1/4 Fine Sea Salt
  • 1 French Baguette, Sliced
  • 3 tbsp Extra Virgin Olive Oil
  • Crumbled Feta
  • Balsamic Vinegar Glaze

Instructions

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Dice tomatoes and onion, removing seeds, and place in a bowl.
  • Add basil, garlic, oregano, pepper, and salt; mix and let sit to marinate.
  • Slice baguette diagonally and brush both sides with olive oil.
  • Arrange baguette slices on the baking sheet and bake for 8 minutes, flipping halfway.
  • Drain excess liquid from the tomato mixture and distribute it on the toasted baguette slices.
  • Drizzle with balsamic glaze and sprinkle feta on top, then serve.

Notes

Ensure excess liquid from tomatoes is drained to avoid sogginess.
Prepare the tomato mixture in advance but toast the bread just before serving.
Use room temperature olive oil for easy brushing on baguette.
