  • 1 cup diced yellow onion
  • 2 lbs chicken breasts
  • 1½ tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp ground black pepper
  • ½ lb cauliflower florets
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 2 lemons (juice and zest)
  • 3 cups fresh baby spinach

Instructions

  • Heat olive oil in a skillet over medium-high heat and sauté diced onion until softened.
  • Add chicken, Italian seasoning, garlic powder, paprika, and pepper. Cook until browned on all sides.
  • Stir in cauliflower, rice, lemon zest, and juice. Deglaze the pan with chicken broth.
  • Pour in remaining chicken broth, bring to boil, then simmer covered for about 10 minutes.
  • Add spinach, cover, and let sit for an additional 10 minutes after turning off heat.
  • Fluff rice with a fork and serve with extra lemon juice if desired.
