Ingredients
- Smoked Ham (5½-6½ lbs)
- Onion
- Carrot
- Black Peppercorns (1 tsp)
- Bay Leaves (2-3)
- Bourbon (½ cup)
- Maple Syrup (½ cup)
- Brown Sugar (4 tbsp)
- Dijon Mustard (2 tbsp)
- Apple Cider Vinegar (2 tsp)
Instructions
- Prepare the ham by poaching in a pot with onion, carrot, bay leaves, and peppercorns for about 1 hour and 15-20 minutes.
- Make the glaze by combining bourbon, maple syrup, brown sugar, Dijon mustard, and apple cider vinegar in a saucepan and simmer for 15 minutes.
- Preheat the oven to 400°F (200°C) and score the ham, then generously brush with half the glaze.
- Roast the ham on a wire rack for 15 minutes, brush on the remaining glaze, then roast for an additional 10 minutes.
- Let the ham rest for 10 minutes before slicing and serving.
