- ½ teaspoon kosher salt
- 1 cup andes creme de menthe baking chips
- ½ cup unsalted butter softened
- ½ cup milk
- 4 cups powdered sugar
- ½ teaspoon peppermint extract
- 1 drop green food coloring
- ¾ cup mini semi-sweet chocolate chips
Instructions
- Preheat the oven to 400°F (204°C) and line a 13×9 baking dish with parchment paper. Set aside.
- In a small saucepan over medium-high heat, combine the butter, cocoa powder, and oil. Bring to a boil while whisking continuously, then remove from heat.
- In a large mixing bowl, combine the granulated sugar, eggs, and buttermilk. Gradually add the butter mixture, but avoid overmixing. Incorporate the flour, baking soda, and salt, stirring until just combined. Gently fold in the Andes baking chips.
- Pour the mixture into the prepared dish and bake for 20 minutes. Remove from the oven and allow to cool.
- Once the brownies have cooled, make the frosting. In a large mixing bowl, beat the softened butter with an electric mixer for 3-4 minutes until pale. Add the milk, powdered sugar, peppermint extract, and food coloring, then beat for an additional 3-5 minutes until light and fluffy. If needed, add more milk to reach the desired consistency. Fold in the mini chocolate chips.
- Spread the frosting over the cooled brownies and refrigerate for 2 hours until set. Cut into squares and enjoy.
Notes
You can adjust the amount of peppermint extract based on your preference for mint flavor.
For a festive touch, add extra green food coloring to the frosting or garnish with additional Andes mints.
