Description

Oatmeal Molasses Dinner Rolls are easy to make with a delightful mix of oats and molasses for a subtly sweet flavor, perfect as a side for any meal or a comforting breakfast treat.


Ingredients

  • 1 cup warm water (240ml)
  • 1/3 cup whole milk (80ml)
  • 1 tablespoon Platinum Yeast (9g)
  • 3 tablespoons brown sugar
  • 3 tablespoons molasses
  • 4 tablespoons unsalted butter
  • 1 cup old-fashioned whole rolled oats (85g)
  • 3 and 1/2 cups bread flour (455g)
  • 1 teaspoon salt
  • 1 egg white beaten with 1 teaspoon of water (for egg wash)

Instructions

  • Combine warm water, warm milk, yeast, and 1 tablespoon brown sugar; let sit until frothy, about 5-10 minutes.
  • Add remaining brown sugar, molasses, butter, oats, salt, and 1 cup of flour; mix with dough hook.
  • Knead the dough for 5-8 minutes until soft and slightly tacky.
  • Transfer to a greased bowl, cover, and let rise until doubled, about 1.5-2 hours.
  • Divide the dough into 15 pieces and shape into balls; place in greased pan.
  • Cover and let rise until puffy, about 30-60 minutes.
  • Brush tops with egg wash, sprinkle oats, and bake at 350°F (177°C) for 26-27 minutes until golden brown.
  • Cool slightly before serving.

Notes

Ensure water is warm, not hot, to activate yeast without killing it.
Store rolls tightly wrapped at room temperature for 2-3 days or refrigerate for up to a week.
For longer storage, freeze in an airtight container for up to 3 months.
