- 1 lb. mild Italian chicken sausage
- 2 tbsp olive oil
- 1 cup onion (diced)
- 4 garlic cloves (minced)
- 1 tsp Italian seasoning
- ½ tsp salt
- ¼ cup all-purpose flour
- 32 oz. chicken broth
- ½ cup heavy cream
- 2 lb. gnocchi
- 1 bunch kale (chopped and stems removed)
- 1 cup parmesan cheese (freshly grated)
- Red pepper flakes to taste
Instructions
- Brown the sausage in a hot skillet, then remove.
- Sauté the onion until translucent, then add garlic, seasoning, and salt.
- Sprinkle flour over veggies, whisk in broth and cream, cook until thickened.
- Add gnocchi, stirring until they float; then mix in kale and sausage.
- Stir in parmesan, season to taste, and serve warm.
Notes
Store leftovers in the fridge for up to 3 days.
For freezing, portion out and store for up to 3 months.
Reheat with a splash of broth or cream for best texture.
