Ingredients

  • Almond Paste
  • Granulated Sugar
  • Egg White
  • Pine Nuts

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Break almond paste into small chunks and mix with granulated sugar until fine crumbs form.
  • Add egg white and mix until a smooth dough forms.
  • Pour pine nuts onto a plate for rolling.
  • Scoop dough into balls, roll in pine nuts to coat, and place on the baking sheet 2 inches apart.
  • Bake for 15-18 minutes until edges are golden brown.
  • Cool on baking sheet for 5 minutes before transferring to a wire rack.

Notes

Use fresh pine nuts for the best flavor.
For a healthier alternative, consider using coconut sugar.
If you prefer sweeter cookies, increase the sugar by a tablespoon.
