This rich chocolate mousse is a delightful treat that combines the intense flavor of dark chocolate with the lightness of whipped cream, making it a perfect indulgence for any occasion.

- 3 eggs (~55g/2 oz each)
- 125g / 4.5 oz dark cooking chocolate , bittersweet / 70% cocoa
- 10g / 0.3 oz unsalted butter
- 1/2 cup cream , full fat
- 3 tbsp caster sugar (superfine white sugar)

Instructions
- Work steadily to ensure whipped egg whites and cream stay cool and firm.
- Separate the eggs by putting the whites into a large bowl and the yolks in a small bowl; do this while the eggs are cold.
- Whisk the yolks until uniform in color.
- Melt chocolate with butter by breaking the chocolate into pieces and placing it in a microwave-safe bowl with butter. Microwave in 30-second intervals, stirring in between, until smooth. Allow cooling slightly.
- Beat the cream until stiff peaks form, being careful not to over-whip.
- Combine sugar with the egg whites and beat until firm peaks form.
Notes
Ensure to separate the eggs when they are cold for easier handling.
Melt the chocolate and butter carefully to avoid burning the chocolate.
Add optional flavorings to the melted chocolate if desired.
