Description

Ritz Peanut Butter Cookies are a delightful blend of crunchy crackers, creamy peanut butter, and rich chocolate. This quick treat is perfect for gatherings or movie nights!

Ingredients

Scale
  • 48 Ritz crackers
  • ¾ cup creamy peanut butter
  • 8 oz milk chocolate melting wafers
  • 8 oz white chocolate melting wafers
  • 2 tsp coconut oil

Instructions

  • Line a baking sheet with parchment paper.
  • Spread 1 teaspoon of peanut butter on one Ritz cracker and top with another to create a sandwich.
  • Freeze the sandwiches for 10-15 minutes until firm.
  • Melt milk chocolate and white chocolate melting wafers in microwave-safe bowls with coconut oil.
  • Dip each sandwich in the melted chocolate, coating it evenly, and tap off excess.
  • Place back on the baking sheet and add toppings if desired.
  • Chill in the refrigerator for 15-20 minutes to set.

Notes

Ensure not to overfill the sandwiches with peanut butter to avoid oozing.
Chilling the sandwiches is important for easier chocolate dipping.
Experiment with different chocolate coatings or top with toppings like crushed pretzels.
