Description

This Sausage, Butter Bean & Tomato Tray Bake is packed with irresistible flavor and simple to prepare. It features juicy sausages, savory butter beans, and fresh tomatoes, making it a perfect choice for a quick dinner or a hearty comfort food option.


Ingredients

  • 1 onion
  • 1 pepper
  • 1 pack of your favourite sausages (6 or 8, or 12 are fine for this recipe)
  • 1 tsp garlic puree (or 1 fresh, crushed clove)
  • 1 tbsp tomato puree
  • 1 tsp paprika
  • 1 tsp thyme
  • 1 tbsp worcestershire sauce
  • 1 tsp sugar
  • 1 400ml tin baked beans
  • 1 400ml tin chopped tomatoes

Instructions

  • Cut the pepper and onion into bite-sized pieces based on your family's preference.
  • Heat oil in a large frying pan.
  • Add sausages to the pan, stirring to coat in oil and browning one side.
  • Once browned, add the onions and stir the sausages to brown the other sides.
  • Cook until sausages and onions are browned to your liking.
  • Add the chopped pepper, sugar, garlic puree, tomato puree, paprika, and thyme, and stir for a minute.
  • Stir in the chopped tomatoes, baked beans, and Worcestershire sauce.
  • Cover with a lid and cook on low for 5-10 minutes until thickened and hot throughout.
  • Serve with mashed potatoes and buttered bread, if desired.

Feel free to customize your sausages according to taste preference.
