Description

Ingredients

  • Cream-style corn (2 cans, 15 ounces each)
  • Whole kernel sweet corn (1 can, 15 ounces, drained)
  • Large eggs (3, beaten)
  • Crushed Ritz crackers (1 ½ cups, divided)
  • Unsalted butter (½ cup, melted, divided)
  • Paprika (½ teaspoon)
  • Kosher salt (½ teaspoon)
  • Ground black pepper (¼ teaspoon)
  • Chopped parsley

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  • In a large mixing bowl, combine cream-style corn, drained sweet corn, beaten eggs, ¾ cup of crushed crackers, and half of the melted butter.
  • Pour the mixture into the prepared baking dish, spreading it evenly.
  • In a smaller bowl, mix the remaining crushed crackers, melted butter, paprika, salt, and pepper.
  • Sprinkle the topping mixture over the corn mixture and bake for 30 to 40 minutes until golden brown.
  • Let it cool for 5 to 10 minutes and garnish with chopped parsley before serving.
