Ingredients
- Cream-style corn (2 cans, 15 ounces each)
- Whole kernel sweet corn (1 can, 15 ounces, drained)
- Large eggs (3, beaten)
- Crushed Ritz crackers (1 ½ cups, divided)
- Unsalted butter (½ cup, melted, divided)
- Paprika (½ teaspoon)
- Kosher salt (½ teaspoon)
- Ground black pepper (¼ teaspoon)
- Chopped parsley
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- In a large mixing bowl, combine cream-style corn, drained sweet corn, beaten eggs, ¾ cup of crushed crackers, and half of the melted butter.
- Pour the mixture into the prepared baking dish, spreading it evenly.
- In a smaller bowl, mix the remaining crushed crackers, melted butter, paprika, salt, and pepper.
- Sprinkle the topping mixture over the corn mixture and bake for 30 to 40 minutes until golden brown.
- Let it cool for 5 to 10 minutes and garnish with chopped parsley before serving.
