Ingredients

  • 1 pound kielbasa or smoked sausage, sliced into 1-inch coins
  • 1 pound red potatoes, cut into 1-inch chunks
  • 1 red bell pepper, sliced into strips
  • 1/2 head small green cabbage, chopped into bite-size pieces
  • 23 tablespoons olive oil
  • salt and pepper to taste
  • 1/2 teaspoon garlic powder or granulated garlic
  • 1/2 teaspoon Italian seasonings

Instructions

  • Preheat the oven to 425°F.
  • Line a large rimmed baking sheet with heavy-duty foil; spread the sausage coins, potatoes, bell peppers, and cabbage evenly over the foil.
  • Drizzle olive oil over the sausage and vegetables; season with salt, pepper, garlic powder, and Italian seasonings. Toss gently to combine and spread evenly.
  • Bake in the oven, uncovered, for 25-30 minutes, or until the potatoes are fork-tender and the ingredients are golden brown. Serve immediately.

Notes

Feel free to use your favorite type of sausage, whether it’s turkey, chicken, or a vegetarian option.
For a spicier kick, add some red pepper flakes at the seasoning stage.
