This Slow Cooker Reuben Dip blends creamy cheese, savory corned beef, and tangy sauerkraut for a delightful dish. Perfect as a quick dinner or comforting snack for gatherings.

- 16 oz. cream cheese, softened (two 8-oz. pkgs.)
- 1 lb deli sliced corned beef or pastrami, roughly chopped
- 2 cups swiss cheese, shredded
- 1 cup sauerkraut, drained
- 1 cup sour cream
- ¾ cup thousand island dressing
- rye bread
- rye chips and crackers
- French bread
- veggies
Instructions
- In a large bowl, mix together all the ingredients until fully blended.
- Transfer the mixture into a 4-quart or larger slow cooker.
- Cook on LOW heat for 2 hours until the cheese melts and the dip is hot and bubbling.
- Garnish with sliced green onion or parsley if desired, and serve with rye chips, crackers, or bread.
Notes
For a smoother dip, blend the ingredients in a food processor before transferring to the slow cooker.
Add more or less sauerkraut to adjust the tanginess according to your taste.
