Description

This Slow Cooker Reuben Dip blends creamy cheese, savory corned beef, and tangy sauerkraut for a delightful dish. Perfect as a quick dinner or comforting snack for gatherings.


Ingredients

Scale
  • 16 oz. cream cheese, softened (two 8-oz. pkgs.)
  • 1 lb deli sliced corned beef or pastrami, roughly chopped
  • 2 cups swiss cheese, shredded
  • 1 cup sauerkraut, drained
  • 1 cup sour cream
  • ¾ cup thousand island dressing
  • rye bread
  • rye chips and crackers
  • French bread
  • veggies

Instructions

  1. In a large bowl, mix together all the ingredients until fully blended.
  2. Transfer the mixture into a 4-quart or larger slow cooker.
  3. Cook on LOW heat for 2 hours until the cheese melts and the dip is hot and bubbling.
  4. Garnish with sliced green onion or parsley if desired, and serve with rye chips, crackers, or bread.

Notes

For a smoother dip, blend the ingredients in a food processor before transferring to the slow cooker.
Add more or less sauerkraut to adjust the tanginess according to your taste.
