These Soft Molasses Cookies boast a tender texture and a delightful blend of warm spices. With their nostalgic flavor and ease of preparation, they’re ideal for any gathering or cozy day at home.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 3/4 cup unsalted butter, softened
  • 1 cup dark brown sugar, packed
  • 1/4 cup white granulated sugar
  • 1/2 cup unsulfured molasses
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • Brown gel food dye (optional)

Instructions

  • Sift together dry ingredients: flour, baking soda, salt, spices.
  • Cream together butter, dark brown sugar, and granulated sugar until fluffy.
  • Mix in the vanilla, egg, and molasses. Combine dry ingredients until just mixed.
  • Portion dough with a cookie scoop and roll in granulated sugar.
  • Chill dough on cookie sheets for 30 minutes before baking.
  • Preheat oven to 350°F and bake cookies for 14-16 minutes.
  • Allow cookies to cool, then prepare cream cheese frosting.
  • Mix cream cheese and butter, then sift in powdered sugar to combine.
  • Optionally, dye part of the frosting brown for decoration.

Notes

To avoid dense cookies, be exact with measuring flour.
Chill the dough to prevent excessive spreading during baking.
