- 1 cup dark brown sugar, packed
- 1/4 cup white granulated sugar
- 1/2 cup unsulfured molasses
- 1 large egg, room temperature
- 1 tsp pure vanilla extract
- 8 oz cream cheese, softened
- 2 cups powdered sugar
- Brown gel food dye (optional)
Instructions
- Sift together dry ingredients: flour, baking soda, salt, spices.
- Cream together butter, dark brown sugar, and granulated sugar until fluffy.
- Mix in the vanilla, egg, and molasses. Combine dry ingredients until just mixed.
- Portion dough with a cookie scoop and roll in granulated sugar.
- Chill dough on cookie sheets for 30 minutes before baking.
- Preheat oven to 350°F and bake cookies for 14-16 minutes.
- Allow cookies to cool, then prepare cream cheese frosting.
- Mix cream cheese and butter, then sift in powdered sugar to combine.
- Optionally, dye part of the frosting brown for decoration.

To avoid dense cookies, be exact with measuring flour.
Chill the dough to prevent excessive spreading during baking.
