Description

This Spiced Gingerbread Loaf is a delightful blend of warm spices and rich molasses, perfect for cozy moments. It’s easy to prepare, making it a must-try treat for gatherings or a comforting snack any time of day.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 and 1/2 teaspoons ground ginger
  • 1 and 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 2/3 cup unsulphured or dark molasses
  • 3/4 cup hot water
  • 1/2 cup unsalted butter
  • 1/3 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup confectioners’ sugar
  • 2–3 tablespoons orange juice

Instructions

  • Preheat oven to 350°F (177°C) and grease a loaf pan.
  • Whisk together dry ingredients in a medium bowl.
  • Combine molasses and hot water in a separate bowl.
  • Cream butter and brown sugar until fluffy; add egg and vanilla.
  • Gradually mix in dry ingredients and molasses mixture alternately.
  • Pour batter into prepared pan; bake for 50-60 minutes until done.
  • Cool in pan for 10 minutes, then drizzle with glaze made from confectioners’ sugar and orange juice.

Notes

Wrap the loaf in plastic wrap for up to 3 days at room temperature.
For longer storage, refrigerate or freeze the loaf for special occasions.
Gluten-free options are available; use a gluten-free flour blend.
