- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 and 1/2 teaspoons ground ginger
- 1 and 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 2/3 cup unsulphured or dark molasses
- 3/4 cup hot water
- 1/2 cup unsalted butter
- 1/3 cup packed brown sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 cup confectioners’ sugar
- 2–3 tablespoons orange juice
Instructions
- Preheat oven to 350°F (177°C) and grease a loaf pan.
- Whisk together dry ingredients in a medium bowl.
- Combine molasses and hot water in a separate bowl.
- Cream butter and brown sugar until fluffy; add egg and vanilla.
- Gradually mix in dry ingredients and molasses mixture alternately.
- Pour batter into prepared pan; bake for 50-60 minutes until done.
- Cool in pan for 10 minutes, then drizzle with glaze made from confectioners’ sugar and orange juice.
Notes
Wrap the loaf in plastic wrap for up to 3 days at room temperature.
For longer storage, refrigerate or freeze the loaf for special occasions.
