Ingredients

  • 8 ounces uncooked pasta (penne or spaghetti)
  • 4 strips thick-cut bacon
  • 1/2 medium onion, chopped
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine
  • 1/4 cup tomato paste
  • 1 cup heavy/whipping cream
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 cup freshly grated Parmesan cheese
  • Small handful fresh basil, sliced thin
  • Salt & pepper to taste

Instructions

  • Boil salted water and cook pasta al dente, reserving 1 cup of pasta water before draining.
  • In a skillet, cook chopped bacon until crispy, then use a slotted spoon to transfer it to a paper towel.
  • Sauté onion in the remaining bacon fat until softened, about 5-7 minutes.
  • Add garlic and pour in dry wine, letting it bubble for about 30 seconds.
  • Incorporate tomato paste, cream, Italian seasoning, and red pepper flakes, stirring to a smooth sauce and simmer for 5 minutes.
  • Mix in bacon and sliced basil, tossing gently.
  • Stir in Parmesan cheese, adding reserved pasta water for desired consistency.
  • Combine drained pasta with sauce, seasoning to taste with salt and pepper, then serve immediately.

Notes

For lighter options, substitute with turkey bacon or a vegan alternative.
If you need a gluten-free option, use gluten-free pasta instead.
