Description

This Spinach Puff Pastry Appetizer combines delicious ingredients like creamy ricotta and spinach for an irresistible treat. Perfect for snacks or parties!


Ingredients

  • Fresh or Frozen Spinach (¾ cup, about 5oz/150 grams)
  • Ricotta Cheese (½ cup, about 5oz/150 grams)
  • Grated Parmesan Cheese (â…“ cup)
  • Grated Fresh Garlic (¼ teaspoon)
  • Breadcrumbs (2 tablespoons)
  • Salt (¾ teaspoon)
  • Black Pepper (â…› teaspoon)
  • Puff Pastry Sheet (1, 9×13 inch)
  • Egg (1, beaten)
  • Poppy or Sesame Seeds (1 tablespoon)

Instructions

  • Thaw or blanch spinach and drain well.
  • Combine spinach, ricotta, parmesan, garlic, breadcrumbs, salt, and pepper in a bowl.
  • Roll out puff pastry and cut into rectangles.
  • Divide filling among rectangles, roll them up, and freeze for an hour.
  • Preheat oven to 400°F (200°C), and line a baking sheet.
  • Slice logs into rounds, arrange on the baking sheet, and brush with egg wash.
  • Sprinkle with seeds and bake for about 25 minutes until golden.

Notes

Squeeze excess moisture from the spinach to prevent soggy pastries.
Use cold ingredients for a flakier pastry.
These appetizers can be made ahead and frozen.
