Ingredients
- Fresh or Frozen Spinach (¾ cup, about 5oz/150 grams)
- Ricotta Cheese (½ cup, about 5oz/150 grams)
- Grated Parmesan Cheese (â…“ cup)
- Grated Fresh Garlic (¼ teaspoon)
- Breadcrumbs (2 tablespoons)
- Salt (¾ teaspoon)
- Black Pepper (â…› teaspoon)
- Puff Pastry Sheet (1, 9×13 inch)
- Egg (1, beaten)
- Poppy or Sesame Seeds (1 tablespoon)
Instructions
- Thaw or blanch spinach and drain well.
- Combine spinach, ricotta, parmesan, garlic, breadcrumbs, salt, and pepper in a bowl.
- Roll out puff pastry and cut into rectangles.
- Divide filling among rectangles, roll them up, and freeze for an hour.
- Preheat oven to 400°F (200°C), and line a baking sheet.
- Slice logs into rounds, arrange on the baking sheet, and brush with egg wash.
- Sprinkle with seeds and bake for about 25 minutes until golden.
Notes
Squeeze excess moisture from the spinach to prevent soggy pastries.
Use cold ingredients for a flakier pastry.
