Description

These Spinach Puff Pastry Bites are packed with flavors of fresh spinach and creamy feta. They are simple to whip up, making them perfect for gatherings or a quick snack.


Ingredients

  • 2 tablespoons butter, unsalted
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 1/2 cups frozen chopped spinach, thawed and drained
  • 1/2 cup fresh parsley, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Parmesan cheese, grated
  • 2 large eggs, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 (10×15-inch) sheet puff pastry, thawed if frozen

Instructions

  • Preheat oven to 375°F and grease a 12-cup muffin pan.
  • Sauté diced onion and minced garlic in butter until translucent.
  • Thaw and drain spinach, then mix with sautéed onions, parsley, feta, Parmesan, one egg, salt, and pepper.
  • Cut puff pastry into 12 rectangles and press each into muffin cups.
  • Fill with the spinach mixture and pinch corners together.
  • Brush tops with beaten egg and bake for 25-30 minutes until golden brown.
  • Cool for 5 minutes before serving.
