Description

These Strawberry Swirl Marshmallows are a treat for the taste buds! With strawberry extract and jello, they are fluffy, flavorful, and simple to prepare, perfect for satisfying your sweet cravings.


Ingredients

  • 1/4 cup powdered sugar
  • 2 tablespoons cornstarch
  • 2 packets of unflavored gelatin
  • 1 cup water divided
  • 3/4 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 teaspoon salt
  • 3 ounces strawberry jello
  • 3 teaspoons strawberry extract
  • 2 drops red gel food coloring

Instructions

  • In a small bowl, combine the unflavored gelatin with 1/2 cup of water and let it bloom.
  • In a large saucepan, mix together the granulated sugar, light corn syrup, the remaining 1/2 cup of water, and salt. Heat over medium until it reaches 240 degrees F.
  • Stir in the strawberry jello until fully combined with the mixture in the pan.
  • Transfer the bloomed gelatin to a stand mixer bowl and slowly pour the hot sugar mixture into the bowl, allowing the gelatin to dissolve.
  • Whip the mixture using a whisk attachment for 8 to 10 minutes until it becomes fluffy and stiff.
  • Prepare an 8×8 inch square pan by lightly spraying it with nonstick baking spray.
  • Mix the powdered sugar and cornstarch in a small bowl, setting aside half for later use, and dust the greased pan with the mixture.
  • In the final minute of whipping, add the strawberry extract and red gel food coloring, continuing to beat until mixed well.
  • Pour the marshmallow mixture into the prepared pan and, if desired, drizzle additional food coloring on the sides and swirl with a skewer for a marbled effect.
  • Sprinkle the remaining powdered sugar/cornstarch mixture over the top of the marshmallows, ensuring they are entirely covered.
  • Allow the marshmallows to rest for at least 4 hours, preferably overnight, to set properly before cutting.
  • Once set, slice the marshmallows into 12 pieces using a sharp knife or pizza cutter, dusting the knife with the powdered sugar/cornstarch mixture to prevent sticking.
  • Toss the cut marshmallows in extra powdered sugar to keep the sides from being sticky.

Notes

Ensure gelatin is fully bloomed for the best texture.
Feel free to adjust the red food coloring for a stronger swirl pattern if desired.
These marshmallows can be stored in an airtight container for up to 2 weeks.
