- 1/2 tsp baking powder
- 1/2 tsp baking soda

- 1 tsp cinnamon

- 1 cup granulated white sugar
- 1 cup unsalted butter, softened
- 1 large egg, at room temperature
- 1 tbsp vanilla bean paste
- 1 tsp orange zest
- 1/4 cup plum jam
- 1/2 cup pink sparkling sugar
- 1/2 cup freeze dried berries
- 1 cup butter, softened for frosting
- 2 cups powdered sugar
- 3–4 tbsp heavy cream
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk together flour, baking powder, baking soda, salt, and spices in a bowl.
- Cream softened butter and sugar together until fluffy, then mix in egg, vanilla, and orange zest.
- Gradually add dry ingredients to wet mixture, mixing until just combined.
- Scoop dough, fill with plum jam, and roll into balls, then coat in pink sugar.
- Flatten slightly, bake for 9-10 minutes until golden, then cool on racks.
- Prepare frosting by processing freeze-dried berries, then mixing with butter, jam, sugar, and cream.
- Pipe frosting onto cooled cookies and add additional sprinkles for decoration.
Notes
These cookies can be stored in an airtight container at room temperature for up to a week.
To freeze, place the cookies in a single layer, then transfer to a freezer-safe container for up to three months.
Ensure butter is softened but not melted for optimal dough texture.
