  • Unsalted butter (1/2 cup)
  • Large egg
  • Vanilla extract (1 tablespoon + 1 teaspoon)
  • Mascarpone cheese (8 ounces)
  • Heavy cream (1/2 cup)
  • Cocoa powder (1 tablespoon)

Instructions

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • Mix together dry ingredients in a bowl: flour, 1/3 cup sugar, espresso powder, baking soda, baking powder, and salt.
  • Beat white sugar and softened butter until fluffy, then add egg and vanilla extract.
  • Gradually combine the dry mixture with wet ingredients until a dough forms, taking care not to overmix.
  • Scoop the dough onto the baking sheets, allowing space between each cookie, and bake for 13-14 minutes until edges are set.
  • Make the topping by beating mascarpone, heavy cream, 3/4 cup confectioners’ sugar, and vanilla extract until fluffy peaks form.
  • Pipe the topping onto cooled cookies and dust with cocoa powder before serving.
