Ingredients
- Puff pastry (1 lb, homemade rough puff pastry or store-bought)
- Granulated sugar (1 cup)
- Ground cinnamon (2 and 1/2 teaspoons)
- Ground nutmeg (1 teaspoon)
- Ground cardamom (1 teaspoon)
- Orange zest (2 teaspoons, optional)
Instructions
- Prepare the dough by chilling homemade or thawed store-bought puff pastry.
- Combine granulated sugar, cinnamon, nutmeg, and cardamom. Divide into two bowls, adding orange zest to one.
- Roll out the dough on a sugar and spice mixture surface, ensuring it's a neat square.
- Sprinkle the filling on the rolled-out dough and gently roll into a log from both edges to the center.
- Repeat the process with the second half of the dough and chill the logs.
- Preheat oven to 400°F (204°C) and line baking sheets with parchment paper.
- Slice chilled logs into 3/8 inch thick slices and arrange on baking sheets.
- Bake for 8-9 minutes, flip, and bake for an additional 10-12 minutes until golden brown.
- Cool on sheets for 5 minutes before transferring to a wire rack.
Notes
Keep puff pastry cold to maintain flakiness in the baked palmiers.
