Description

Ingredients

  • 1½ cups room-temperature water
  • 2–3 tablespoons honey
  • 1 teaspoon active dry yeast
  • 3 cups bread flour or all-purpose flour
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • ¾ cup dried cranberries
  • ½–¾ cup raisins
  • ½ cup chopped walnuts

Instructions

  • Start the yeast by mixing room-temperature water and honey; add yeast and let it foam.
  • Combine dry ingredients in a separate bowl and whisk well.
  • Mix yeast mixture with dry ingredients until just combined.
  • Let the dough rise for 8–10 hours at room temperature, covered.
  • Shape and refrigerate the dough overnight after incorporating cranberries, raisins, and walnuts.
  • Preheat the Dutch oven to 450°F (232°C).
  • Score the dough and bake covered for 30 minutes, then uncover and bake for 15–20 minutes until golden.
  • Cool completely on a wire rack before slicing.

If using frozen bread, reheat at 350°F for about 10 minutes to restore texture.
