Ingredients

Scale
  • 1 cup + 1 tbsp Butter
  • 1 1/4 cups Sugar
  • 1 1/4 cups Brown Sugar
  • 1 cup Corn Syrup
  • 1 cup + 1 cup Heavy Whipping Cream
  • 1 tsp Vanilla

Instructions

  • Prepare a 9×13 pan with aluminum foil and grease with butter.
  • In a saucepan, combine butter, granulated sugar, brown sugar, corn syrup, and 1 cup of heavy cream over medium heat.
  • Bring to a gentle boil, stirring in the additional 1 cup of heavy cream until the mixture reaches 240°F.
  • Remove from heat and stir in vanilla extract with care.
  • Pour the caramel into the prepared pan without scraping the sides.
  • Allow to cool until firm, then lift out of the pan to cut into pieces and wrap individually.

Notes

Use high-quality butter for the best flavor.
Avoid stirring once the caramel boils to prevent crystallization.
