Ingredients

Scale
  • 1/2 cup crumbled blue cheese
  • 3 apples
  • 1 cup salad mix
  • 10–12 small croutons
  • 1 handful walnuts
  • 1 tsp apple cider vinegar
  • 1 tsp balsamic vinegar
  • 1 tbsp honey
  • 3 tbsp olive oil
  • 1 tsp Dijon mustard
  • Pinch of salt and black pepper

Instructions

  • Combine apple cider vinegar, balsamic vinegar, honey, olive oil, and Dijon mustard in a jar and shake well.
  • Dice apples into bite-sized pieces and place in a large bowl.
  • Add salad mix and walnuts to the apples and gently mix.
  • Dress the salad with the prepared dressing and sprinkle with salt and black pepper.
  • Top with crumbled blue cheese and croutons before serving.

Notes

Dress the salad just before serving to prevent wilting.
Store leftovers in an airtight container in the refrigerator for up to three days.
For a vegan version, use maple syrup instead of honey and omit blue cheese.
