Description

This salad features a refreshing blend of apples, blue cheese, and walnuts, making it a delightful choice for any potluck or gathering. Its easy preparation and vibrant flavors ensure it stands out, perfect for sharing with colleagues.

Ingredients

Scale
  • 1/2 cup crumbled blue cheese
  • 3 apples
  • 1 cup salad mix
  • 10–12 small croutons
  • 1 handful walnuts
  • 1 tsp apple cider vinegar
  • 1 tsp balsamic vinegar
  • 1 tbsp honey
  • 3 tbsp olive oil
  • 1 tsp dijon mustard
  • Pinch of salt & black pepper

Instructions

  • Combine the dressings: Shake apple cider vinegar, balsamic vinegar, honey, olive oil, and Dijon mustard in a jar.
  • Prepare the apples: Dice apples and mix with walnuts and salad greens in a bowl.
  • Dress and toss: Add dressing, salt, and pepper to the salad; toss gently to coat evenly.
  • Serve with love: Portion into bowls, and top with blue cheese and croutons.

Notes

Add dressing just before serving to keep the salad fresh.
For a vegan option, use agave instead of honey and skip the cheese.
To prevent apples from browning, toss them with lemon juice if prepared in advance.
