- 1 cup espresso
- 1/2 cup brown sugar
- 1 cup white chocolate
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/4 teaspoon nutmeg
- 1 tablespoon gelatin
- 1 cup mascarpone
- 1/2 cup molasses
- 1 egg yolk
- 2 teaspoons ginger
Instructions
- Bloom the gelatin in a small bowl of cold water.
- In a saucepan, mix warm espresso with brown sugar until dissolved. Stir in white chocolate, cinnamon, cloves, and nutmeg until smooth and then let cool slightly.
- In a mixing bowl, whip mascarpone and heavy cream together until soft peaks form. Gently fold in the cooled mousse base until well combined.
- In a separate bowl, mix flour, ginger, and salt. Add molasses and egg yolk, stirring to form a soft dough. Roll out and cut circles for the cookie base.
- Grease silicone dome molds and fill with mousse mixture, pressing in cookie rounds until submerged. Cover and freeze overnight.
- Heat glazing ingredients until warm (around 90°F). Remove mousse domes from molds and place on a rack. Pour glaze over the domes.
- Serve the domes on a plate, optionally garnished with cocoa powder or mini gingerbread cookies.
Notes
Ensure the glazing ingredients are at the right temperature for a smooth coating.
These mousse domes can be prepared in advance and stored in the freezer until serving.
